- 500 g dried white beans
 - 1 onion (chopped)
 - 1 red bell pepper (chopped)
 - 1 tomato (chopped or 2 tbsp tomato paste)
 - 2 cloves garlic (minced)
 - 3 tbsp vegetable oil
 - 1 tsp paprika
 - 1 tsp chili flakes (optional)
 - Salt and pepper to taste
 - 1 bay leaf
 - 1 liter water
 - Fresh parsley (for garnish)
 
- Soak and cook the beans: Rinse the beans and soak them in water overnight. Drain and place them in a pot with fresh water and a bay leaf. Bring to a boil, then reduce heat and simmer until tender, about 1.5 hours. Drain and set aside.
 - Prepare the vegetable base: Heat the vegetable oil in a pan over medium heat. Sauté the onion, bell pepper, and garlic until soft. Add the tomato (or tomato paste), paprika, chili flakes, and a pinch of salt and pepper. Cook for 5 minutes.
 - Combine and bake: Preheat your oven to 200°C. In an oven-safe dish, mix the cooked beans with the vegetable base. Add a little water if needed to ensure the mixture is moist. Bake for 20-30 minutes until the top is slightly browned.
 - Serve: Garnish with fresh parsley and serve hot, often accompanied by crusty bread or fresh salad.
